Wine without alcohol is the new trend

More and more people are reducing their alcohol consumption and are prepared to spend more money on non-alcoholic drinks such as wine. As supermarkets usually only stock standard wines, there is a growing trend to buy non-alcoholic drinks such as beer, wine and spirits online.

Production of non-alcoholic wine

A major trend in non-alcoholic wine is the use of newly bred yeasts that have a very low degree of fermentation. To be considered alcohol-free, these yeast strains stop their biochemical activity at below 0.5% alcohol. These yeast strains are constantly being improved and further developed so that, despite their low fermentation, they have a full-bodied taste - just as we are used to from normal wine.

The novino company is particularly innovative when it comes to producing wine without alcohol. The grapes are crushed and pressed in the normal way. To produce "wine" from them, however, no wine yeast is used, but other, new cultures that convert the sugar from the grapes into aromatic fruit acids instead of alcohol. This form of production is intended to make the drink taste as much like the world-famous 'original' as possible.

Incidentally, such cultures are common in beverages and foods. They are used in the production of yoghurt or kombucha, for example. Of course, such a non-alcoholic wine does not have the typical sharpness of alcohol. Some palates are particularly happy about this.

Production and alcohol content

The production of non-alcoholic wine is a fascinating process that aims to remove the alcohol from the wine while preserving the characteristic aromas and flavors as much as possible. Here are the basic steps in a numbered list, as this makes the process and its sequence clearer:

  1. Fermentation: first the wine is fermented in the traditional way. This means that grape juice is mixed with yeast, which converts the sugar in the juice into alcohol and carbon dioxide.
  2. Alcohol removal: After the wine has fermented and matured, the alcohol is removed. There are various methods to achieve this, of which vacuum distillation and reverse osmosis are the most popular.
    • In vacuum distillation, the wine is heated, but at a lower pressure than normal. This allows the alcohol to evaporate at lower temperatures, which helps to preserve the wine's flavors.
    • Reverse osmosis separates the alcohol and water from the rest of the wine. The non-alcoholic part is then blended back together to preserve the flavors.
  3. Fine-tuning: Once the alcohol has been removed, the wine can be further refined to improve the taste and aroma. This may involve adding flavorings or adjusting the acidity.
  4. Bottling: The finished non-alcoholic wine is finally filtered and bottled.

The alcohol content in non-alcoholic wine must legally be less than 0.5% to be considered "non-alcoholic". This low alcohol content is usually imperceptible and allows those who wish or need to avoid alcohol to enjoy the wine.
