Jaga Royal GmbH is a young producer of innovative fruit distillates (brand: SissiS) and rum (brand: JagaRoyal) based in Tutzing on Lake Starnberg - in the neighborhood of Possenhofen Castle, where the future Empress Elisabeth of Austria spent her youth. They set out in 2017 to bring fresh momentum to the very traditional fruit distillate market. To do so, they completely revamped the production process. Using a special maceration process and aroma-preserving vacuum distillation technology, they have succeeded in producing fruit distillates that are particularly fruity in aroma and taste and beautifully mild on the finish. SissiS distillates can be enjoyed pure, but are also very suitable for mixing exciting aperitifs, long drinks and cocktails.

SISSIS PRODUCTION PROCESS

To produce SissiS fruit distillates, single-variety fruits are processed into a fruit puree and mashed with a neutral-tasting yeast. The aim is to avoid interfering aromas that can be caused by peel residues, pips, yeast, etc. During the fermentation process, the yeast bacteria convert the fructose into alcohol. The alcoholic mash is distilled under vacuum. Since little heat has to be used in this process, the temperature-sensitive fruit aromas are fully preserved. The distillate is then pre-stored in steel tanks and matured in earthenware containers. SissiS distillates from wooden barrels (apricot, cherry, wild raspberry) are additionally set in wooden barrels with dried fruit at the end of this multi-stage maturation process. In this process, the distillate absorbs the aromas and fructose from the dried fruit. No granulated sugar, sugar syrup or artificial flavoring is added.
