When you think of aromatic ingredients for beer, hops, yeast and malt immediately spring to mind. The craft beer movement has added a few more ingredients to this list: In addition to the usual suspects, spices, fruit and even vegetables are now being added to the kettle. But even in this list of special ingredients, wood would hardly feature.
Wood? That's right. The spiritual father of all beer sommeliers and exceptional brewer Axel Kiesbye is not afraid to turn the most unthinkable of materials into beer ingredients. Year after year, the wild Austrian by choice transforms forest plants into the finest beer specialties. His Waldbier 2020 is all about the oak, a tree that populates the forests of Europe with its magnificent crown, gnarled trunk and deep green foliage. The brewer selected the trunks for his beer back in 2015 in the Bundersforste district of Kierling in the Vienna Woods. The years of preparatory work were necessary because the selected trees were to be processed into barrels. The barrels specially made for the forest beer were toasted and then served as storage space and aroma dispensers for the 2020 forest beer. Over the course of several months, the aromatic wood notes of the barrel shaped the character of the beer.
Waldbier Eiche is a 6.2% creative beer with harmonious notes of creamy forest honey, spicy rum, sun-kissed mirabelle plums and a hint of coconut.
