When it comes to tequila, most people immediately think of Mexico. This is no wonder, as the spirit from the heart of the agave plant is Mexico's national drink.

Tequila is not simply an agave spirit, but a special form of the spirit mezcal. For a mezcal to be called tequila, it must meet certain requirements in terms of the raw material and the production process.

Tequila has long since conquered the whole world and is much better known than mezcal. In our online store, you will find numerous tequila varieties that differ in terms of their ageing and aromas.

What is tequila?

Tequila is a special form of the agave spirit mezcal. The spirit takes its name from the city of the same name where it is distilled. The city of Tequila is located on the Mexican Pacific coast, in the Mexican state of Jalisco.

What makes tequila from Mexico so special?

Tequila must meet another requirement to be worthy of its name: it cannot be made from just any type of agave. Only the blue agave, which bears the Latin name Agave tequilana, may be used for the production of tequila. It is also known as Weber agave.

In our online store, you can buy cheap tequila that is guaranteed to have been distilled from the Agave tequilana. The heart of the ag ave is used to make tequila. In the local language, Nahuatl, it is called mescal, which means "house of the moon".

The history of tequila

The history of tequila probably begins in the 16th century, when the Spaniards produced it in the town of the same name. The blue agave grew abundantly there and was used for many purposes. The drink pulque was also made from it. The Spaniards probably made a distillate from it. However, production was banned by the government.

You wouldn't be able to buy tequila today if the Spanish hadn't made it in the forbidden area. When Mexico gained independence in 1821, local producers expanded production. A similar drink to tequila is sotol, which is produced in a similar way to tequila and is the national drink of the Mexican state of Chihuahua.

These tequila categories exist

There is even a regulatory authority for tequila, the Consejo Regulador del Tequila A.C., which acts on behalf of the Mexican government. It monitors compliance with the legal standards for the production and marketing of tequila. The regulatory authority distinguishes between two basic qualities of tequila:

- Mixto is a tequila in which at least 51 percent of the sugar used to produce alcohol comes from the Weber agave. The remaining sugar can come from other agave varieties or other sources. Cane sugar is often used. Mixto Tequila can be bottled and shipped in tanks. The alcohol content in the tank is usually still 55% by volume. The alcohol content is only reduced to drinking strength with water when Mixto Tequila is bottled.

- 100% agave azul may only be bottled and shipped. Of course, you can also buy this tequila directly from us online. The barrels may only be opened and the tequila bottled under the supervision of the regulatory authority.

What types of tequila are available?

There are also differences in tequila in terms of maturation. If you want to buy tequila online, you can choose between five different degrees of maturity. In Mexico, Spanish designations are used for maturation, while English designations are used for export:

  • Blanco, Silver or Plata refers to a clear, transparent tequila that is bottled immediately after distillation.
  • - Gold, Joven or Oro is a mixture of Tequila Blanco and aged tequilas. Aged tequila can be used in various degrees of maturity. To give this tequila a softer or more mature taste, it can be enriched with sugar couleur, sugar syrup, glycerine or oak wood extracts up to one percent of its weight.
  • Aged or reposado is a tequila that has been stored in oak barrels for at least two months. You can also get this tequila in our store.
  • Extra-aged or anejo tequila is tequila that has been stored in oak barrels for at least one year. However, it may not be stored for longer than three years. The capacity of the container must not exceed 600 liters. Water is used to regulate the alcohol content to drinking strength.
  • Finally, there is ultra-aged or extra anejo, which must be stored in oak containers for at least three years. This category is still fairly new and was only introduced in March 2006.

How is tequila made?

Tequila requires a long production process. Only the heart of the agave, called pina, is used as the vegetable raw material for the production of tequila. It is removed from the plant and cooked under steam at temperatures of 60 to 85 degrees Celsius for 24 to 30 hours. Cooking in autoclaves is quicker. It then only takes 8 to 14 hours. The sugar contained in the agave is converted into simple sugars.

After cooking, the agave hearts must cool for around 36 to 48 hours before they are chopped. Agave juice and sugar are released from the agave hearts by blasting them with water.

The agave juice is squeezed out. Before the agave juice is processed further, a decision must be made as to whether it is to be 100% tequila or mixed tequila. To make it 100 percent tequila, the agave juice is filled into large tanks without sugar. For mixto tequila, 51 percent agave sugar must remain. In addition, a maximum of 49 percent other sugar is added.

In order for you to be able to drink your tequila in the first place, the base must be fermented. Yeast is added for this. Fermentation can take up to 12 days, depending on the temperature and time of year. However, it can also be carried out using modern chemicals and then often only takes one day. During fermentation, the sugar is converted into alcohol while the yeast dies.

Before the tequila arrives in our online store, the producer has to distil it twice, or sometimes even three times. One distillation takes four to eight hours.

The result of the distillation is clear tequila. So that you can also buy other varieties, storage is required for the maturation period. Maturation takes place in wooden barrels.

If you want to buy tequila in our online store, you can be sure that only the blue agave was used in its production - otherwise the spirit would not be allowed to bear this name. The leaves of this agave have a bluish-green color. In the state of Jalisco in Mexico, this agave has to grow for at least ten years before it can be harvested.

How much alcohol does tequila contain?

The alcohol content of tequila is usually 38 to 40 percent. However, there are also varieties with an alcohol content of 50 or more percent.

How do you drink tequila?

You can drink tequila straight. It develops its aroma best at room temperature. Unlike a shot, it can absorb oxygen in a cognac snifter or sherry glass. This allows the aroma to come into its own. Salt or lime distorts the aroma. You can also mix tequila for a cocktail or long drink.

What are the best tequila cocktails?

Many people who regularly buy tequila use it to make a tequila sunrise cocktail: tequila is mixed with orange juice and grenadine. Tequila Blanco is best for cocktails.

The Margarita is a short drink (shot) for which tequila is mixed with orange liqueur and lemon juice.

You can also make Paloma with tequila. Tequila is mixed with grapefruit liqueur, lemon juice and salt.

For Charro Negro, mix Tequila Blanco with cola and lime juice.

But tequila is most popular as a shot with salt and lemon - or modified with orange and cinnamon.
