According to the recipe of our Estonian grandma from Ösel (Saaremaa), we brew healthy and tasty birch sap. Birch sap has been tapped for centuries in Estonia and elsewhere and has become a Nordic tradition! It is harvested during a few weeks in spring and in folk medicine it is also called youth elixir. Since our grandma has been collecting the sap for decades, we have grown up with this magical juice.

We work with several birch sap collectors throughout Estonia to bring you this refreshing and revitalizing drink that we ourselves have enjoyed for years.
