One reason for the distinctive taste and reputation of Felipe Camarena and his world-famous El Pandillo distillery in Jalisco, Mexico, is the traditional production method, which is highly elaborate:
First, the agaves are heated in a stone oven and then crushed in a handmade metal tahona. Distillation later takes place in nothing but copper stills. The water for the tequila is also a mixture of 50% spring water and 50% rainwater. This is exactly the genius of Felipe.
