- 1 whole chicken or chicken pieces
- 2 carrots, roughly chopped

- 1 onion, halved

- 10 peppercorns
- salt to taste
- 2 liters of water
Place all the ingredients in a large pan and bring to the boil. Reduce the heat and simmer for 3-4 hours. Strain and keep the stock.
