This top Brazilian coffee comes from the Fazenda Sao Silvestre in the mountains of Minas Gerais, one of the most traditional and best coffee growing areas at 1300 meters above sea level. Fazenda Sao Silvestre regularly achieves top marks at international tastings. The coffee farm of about 250 hectares produces, with great dedication and social responsibility, a layered coffee with very limited availability, respecting the local ecosystem.
After the first rough sorting, the cherries are sorted in a water tank according to their degree of ripeness before part of the pulp is removed and the beans are placed in the sun to dry with the remaining pulp. During this drying process, which lasts two days, the coffee bean draws the sweetness from the remaining pulp, giving it its distinctive flavor.
