The Flemish Red Ale from Kykao is a complicated and time-consuming brew The recipe was developed and the raw materials selected with the help of several mentors from Belgium The Belgian masters also supervised the brewing process
To create a complex, balanced and deep beer, the malt base of Greek grain was fermented using wild yeasts from the region and bacteria The beer was aged in oak barrels for two years The fine drop was then poured onto a bed of fruit and matured for a further year The fruit also comes from Greece: Juicy sour cherries, sun-kissed strawberries and hand-picked mulberries were sourced from local farmers With a fabulous ratio of 1.2 kilograms of fruit per liter of beer, it's fair to say that the fruit had a significant impact on the taste And that's not all: The finished beer flows into the glass in a shimmering ruby red and fills the air with the aroma of ripe summer fruit The first sip follows hot on its heels and beguiles with cherry, strawberry and mulberry in abundance A strong, fruity acidity accompanies the fine sweetness and expansive fruitiness, lending the brew a beautiful freshness and elegance
Good things take time This beer has had more than three years to mature and is therefore more than good!
