The Franconian brewery Leikeim from Altenkunstadt has preserved a very special tradition: some of its brews are still produced today using the centuries-old stone beer process In this technique, the mash is not heated electrically but using hot stones The stones, which are made to glow in the fire, caramelize the malt sugar and ensure an exceptionally round and mildly sweet taste in the beer This process used to be more common, but hardly anyone goes to the trouble today
