The pomace is the residue that remains after pressing the grapes and comes from the wine village of Durbach in Baden. Formerly a waste product, good and above all fresh pomace is now only available through good relationships. Since only a little juice is still attached to the grape skins, the pomace is tamped dry into barrels and then filled with water. After only a few days, the marc can be distilled with the addition of plenty of water.
The brandy has typical earthy tones with a powerful spicy fruit and the floral aromas of the Gewürztraminer grape.
