The Neil Ellis Op Sy Moer shimmers in a straw yellow, which changes to a light green at the rim, in the glass. The complex bouquet exudes the delightful scent of citrus and pineapple with slightly nutty undertones. Fresh and spirited, the well-structured blend of Grenache Blanc (45%), Palomino (28%) and Chenin Blanc (27%) presents itself on the palate before a long-lasting and creamy finish. By the way, Op Sy Moer means "on the yeast". Aging on the lees makes the wine more complex and rich. Feel free to give the Neil Ellis Op Sy Moer a little time in the glass, it will allow the flavors to develop better.
