Beer style: Wild Ale dry-hopped with Hersbrucker Spät
Weddings are festive affairs: People come together to seal the love of two people for each other with a ceremony, followed by good food and alcohol galore The marriage of two beers is also worth celebrating, especially when the result is as delicious as Dispersed Vertices from To Øl
The brew is a blend of a barrel-aged beer and a freshly brewed Saison The older specialty beer was fermented with wild yeasts and aged in oak barrels for a fabulous two years after the brewing process To deepen the flavour even further, the beer was then transferred to a large wooden tub and combined with the Saison beer Together they matured there for a further three months and were cold-hopped with a batch of Hersbrucker Spät before bottling For maximum aroma, whole cones were used
The final result rewards the elaborate process with a fruity-fresh bouquet and an incomparable taste The aroma is composed of wild berries, stone fruits, citrus fruit and hints of oak and presents a successful interplay of fruity acidity, funky yeast and soft sweetness The subtly composed balance flatters the palate and soul and delights with its dry character and silky-soft mouthfeel
