Henrik Brinks, Master Distiller, and Sune Urth, Head of Development, created Gin Bay Leaf to celebrate the distillery's new organic certification. The two top tasters traveled to Italy, where Henrik talked about the idea of distilling bay leaf into the gin. At the same time, Sune dreamed of adding angelica.
