How do you recognize a spruce and how does it differ from a fir, for example? Here the mnemonic helps: The spruce stings, the fir does not. This unpleasant characteristic has led to the spruce, which has been used as a Christmas tree since the 17th century, being replaced by the now popular Nordmann fir, with the disadvantage that the Christmas forest smell has disappeared from living rooms, as the latter contains almost no essential oil. We prefer to keep our spirits high with spruce and its aromatic organic needles from wild harvesting, which impress with their high essential oil content.

But this product is exactly what DSM stands for: Trying out new, unprecedented things. We went out and collected freshly fallen leaves, which had turned a beautiful yellowish to red color after the chlorophyll had decomposed due to carotenoids and anthocyanins, and macerated them immediately. The tasting then brought the final surprise, because in addition to the autumnal notes, there are also surprisingly fruity notes that complete the experience of this spirit.
