The Kellerbier differs from conventional Kellerbier not only because of its elegant, almost playful name Elsa looks similar to its classic counterparts, but that's almost where the similarities end The Kellerbier from Flügge is made with the historic Chevallier malt variety This special malt comes from a time when malt was still natural and not artificially bred It is characterized by a lower starch content: Instead of protein, the malt variety contains a whole lot of flavor In addition to this special grain, the aromatic Hallertau hops are added to the kettle The beer specialty is fermented with the Norwegian yeast strain Kveik This is probably the biggest difference to conventional Kellerbier and the one that has the most lasting effect on the taste The Kveik yeast conjures up a wonderfully fresh acidity in the beer, which is reminiscent of green apples and goes wonderfully with the usual Kellerbier aroma
Elsa flows into the glass in naturally cloudy amber and is adorned with a dense, white head A tantalizing aroma of oven-fresh bread, caramelized nuts and fruity hops rises from the creamy splendour The first sip follows the olfactory first impression and reveals a subtly balanced cellar beer with surprising freshness and a small acidic kick
