Viticulture: Sloping vineyards with slate rock and flat vineyards with loam and clay soil. Hand and machine harvest. Ideal grape ripeness for a delicately tart, fruity wine with slightly less alcohol.
Cellar: The three grape varieties are harvested and vinified together as a cuvée. After destemming, the grapes undergo traditional open mash fermentation in vats. During fermentation, the cap is manually punched down several times a day (remontage). After a further four weeks of resting on the skins, the grapes are gently pressed. This procedure promotes the extraction of aromas, color and fine tannins from the grape skin. Malolactic fermentation then takes place in used small oak barrels (225-liter barriques) and stainless steel. The wine matures in these for several months. We achieve the finely tart taste by adding sweet reserve (unfermented, sweet grape juice from the three grape varieties) shortly before bottling.

White wine Blonder Hans 750ml
Pure sunshine! Described by its discoverers as the "sun vine", the sustainable Solaris grape variety surprises even true connoisseurs. With its delicately playful fullness and beguilingly fruity-floral aroma of vine blossom, our feinherber Blonder Hans always flirts with pleasure.
Recommended drinking temperature: 8-10 °C
Food pairing inspiration: Grilled fresh tuna with rosemary potatoes and grapefruit chutney.
Viticulture: South/southwest-facing steep slope at high altitude. Deep slate with good humus structure. Hand and machine harvest. Yield-reduced, fully ripe grapes with 100 °Oechsle.
Cellar: Before we press the grapes, we use the oenological stylistic device of a 12-hour maceration period, which allows an intense aroma to develop. Pre-clarification of the must is followed by slow, natural sedimentation. We ferment the must slowly and gently over several weeks in cooled stainless steel tanks. We then allow the wine a long maturation period on the vital fine lees until at least spring.
