The Landgasthof Adler is one of the oldest documented inns in the Ellwangen district and has changed hands several times over the centuries. Anno 1858 Jakob and Pauline Bauer acquire the Landgasthof Adler, and since then it is in family ownership. Things really took off in the mid-1980s. And it wasn't long before restaurant guides took notice of what was developing in Rosenberg. Not only the food, but also the ambience and the warm atmosphere at the Adler spread the word unceasingly.

Eventually, the Michelin star follows, supplemented by 18 points by GaultMillau and the award for Josef Bauer as Chef of the Year by the Bertelsmann Guide. The Feinschmecker, in turn, has repeatedly named the Landgasthof Adler the best country inn in Germany.

Already during his long years in top gastronomy, Josef Bauer discovers his love for fine brandies, not least due to the demand of his guests. And so the in-house distillery is put back into operation and numerous spirits are produced: Apple, pear, plum, walnut, herb, caraway, grain, bloodroot and whiskey, to name just a few. A rolling stone gathers no moss - in keeping with this motto, Josef Bauer decided after retiring at the end of 2016 to devote more time in the future to reviving his distillery. He is actively supported in this challenging and constantly expanding project by his entire family.
