On the palate, the Waterford Blanc de Blancs Cap Classique delights with a fine mousse and smooth texture. A lively acidity is complemented by delicate notes of pear and a hint of lime. Green apple provides freshness, while a fine, balanced sweetness rounds off the finish.
The six-year ageing on the lees gives the Cap Classique a special depth and structure. As it matures, rich brioche and nutty notes come to the fore, further intensifying the luxurious mouthfeel.
