For the New England India Pale Ale called Wilder Billy - Salad Control, two Berlin breweries have joined forces in a collaboration: Ulrike Genz from Schneeeule sat down with the brewers from Fuerst Wiacek and developed a completely unconventional NEIPA
Their Wilder Billy is a juicy, wonderfully cloudy beer brewed with a whole range of unusual ingredients: In addition to the usual suspects, ginger, orange and lemon peel as well as lactic acid cultures went into the kettle and gave the creation its very special flavor To stay true to her style, Ulrike put her own stamp on the New England IPA and unceremoniously transformed it into a Wild Sour NEIPA
The collaboration brew flows into the glass in a strong cloudy straw gold color and rounds off its handsome appearance with a small crown of blossom-white foam From the quickly dwindling splendor rises a peppery scent of spicy ginger and tart citrus fruits and seduces to the first sip This reveals a slim, A fine round dance of sun-drenched orange, exotic lemon and spicy ginger tickles the taste buds, while the hops add floral components and a delicate bitterness A fruity acidity accompanies the interplay of flavors and lends it a wonderful freshness
