Cellar master Pierre Lemoine matured this wine for around 1 year in stainless steel tanks without the influence of wood in order to preserve its incredible fruitiness.
Beguiling notes of wild berries, cherry and black and red currants pour from the glass. On the palate, the "Cavalcade" is smooth and soft with juicy fruit and subtle herbal notes of thyme and rosemary. It has a beautiful freshness and great length on the palate and shows exciting minerality. Great fun not only as a food companion, but also on its own!

Château Gilbert & Gaillard
The wild and romantic region around the village of Saint-Chinian north of Narbonne is still a real insider tip in the wine sector. The soils and climate are perfect for producing wonderful wines outside the mainstream. One of the real insider tips is the still young Chateau Gilbert & Gaillard, which was founded by the two renowned French wine critics Philippe Gaillard and François Gilbert. The Chateau produces on its own 30 hectares of vineyards, located at an altitude of 200m above sea level, wines full of character, which are characterized above all by their freshness and elegance. The vines are on average 35 years old and reflect absolutely authentically the exceptional terroir of Saint-Chinian. The wines of the line "Terre Sauvage" are already certified BIO. All other wines of the Chateau will receive this classification with the next vintages.
