This top Brazilian coffee comes from Fazenda Sao Silvestre in the mountains of Minas Gerais, one of the most traditional and best coffee-growing regions at an altitude of 1300 meters. Fazenda Sao Silvestre regularly scores top marks at international tastings. The coffee farm, which covers around 250 hectares, produces a single-vineyard coffee with great dedication and social responsibility, respecting the local ecosystem.
After the first rough sorting, the cherries are sorted in a water tank according to their degree of ripeness before some of the pulp is removed and the beans are placed in the sun to dry with the remaining pulp. During this drying process, which takes two days, the coffee bean extracts the sweetness from the remaining pulp, giving it its unmistakable taste.
