KÕIV Organic Birch Sap Spirit - Birch sap spirit

KÕIV 50cl is an exclusive premium spirit in a small edition - the 2024 edition is limited to just 250 bottles. It is made exclusively from natural birch sap harvested in early spring. This unique eau-de-vie reflects the purity of Estonian nature and traditional distillation techniques.

Production method

The birch sap is extracted by hand from birch trees in the Haanjamaa region in April. The natural sugar (glucose and fructose) is gently concentrated by reverse osmosis filtration. The concentrate is fermented into birch sap wine (6-9% vol.) and then distilled twice in copper kettles (pot stills) and a column to obtain a refined eau-de-vie. The alcohol content is adjusted with purified birch sap from the reverse osmosis process. Finally, the spirit is cold-stabilized and bottled at 52% vol.

Serving suggestion

Excellent as an aperitif or digestif. Ideal for premium cocktails. Best served in a chilled eau-de-vie tulip glass.

Raw material

100% natural organic birch sap. Around 200 liters of birch sap are required to produce one liter of KÕIV birch sap spirit.

Tasting notes

Appearance: Crystal clear, brilliant, colorless.

Aroma: Fresh and spring-like; sweet birch sap, exotic fruit notes with hints of pineapple, light stone fruit (yellow cherry plum) and a subtle vanilla spice.

Taste: Fresh yet intense, sweet and fruity, with a long, elegant finish and a gentle hint of spice.
