With its latest creation, the Spanish brewery La Pirata is venturing into uncharted territory: Burning Ice is a so-called Cold IPA This beer style is brand new and is causing a sensation in the craft beer scene

To brew a Cold IPA, brewers combine conventional IPA ingredients with special lager or pilsner malts and yeast strains that were also designed for lagers When the lager ingredients meet the variety of hops in the IPA, the result is a particularly crisp, fresh version of the India Pale Ales, The lightness is provided by additives such as rice or corn La Pirata has brewed Burning Ice with rice flakes and uses this technique to achieve a particularly light-footed, elegant texture The Cold IPA is an aroma-intensive sub-category of the IPA and impresses with its clean character, lean body and full hop power

Burning Ice flows into the glass in a cloudy golden hue and forms a small crown of airy foam The lively carbon dioxide transports a fine aroma of tropical fruit, exotic vanilla and sour citrus fruits to the nose On the tongue, the Cold IPA is wonderfully refreshing: juicy fruit meets tangy carbonation, sweetness combines with acidity and a clean bitterness combines the flavours into a summery symphony The crowning glory is a long, bitter finish with a full-bodied fruit flavour
