More information about Marten quince brandy
The fruit for the quince brandy comes from countless orchards in our region. They are sorted as soon as they are delivered and then left to ripen in the mash store until they are fully ripe. Care must be taken here, however, as the quinces are very sensitive despite their hardness and tend to rot from the inside out. Immediately before mashing, the fuzz, which contains a lot of bitter substances, is rubbed off. The fruit is then chopped up and fermented with the addition of quince juice and water. The juice is necessary to make the dry fruit liquid at all. The result is a clear, pure quince aroma with wonderfully fresh citrus notes. On the palate, it is very complex with a slightly tart fruit and a subtle sweetness.
