So what is Persia or Mallorca? Some of our product names can cause the connoisseur to frown. But it's easier than you think: our organic limes come from the Germans' favorite island, hence "Mallorcan", and in addition to the Persian lime (Citrus x latifolia), there is also the Mexican lime (Citrus x aurantiifolia).
These are two different hybrids that differ in appearance and in the composition of their essential oils: the Mexican lime is only about the size of a table tennis ball and contains many seeds, while the Persian lime is larger and seedless. Investigations into the composition of the essential oils have revealed sufficient differences to explain the different smell and taste of the two lime varieties. It is up to you to decide which one you prefer. In the end, we opted for Persian lime, which we carefully macerated and then slowly distilled after extraction.
The result is a top-class spirit which - although also suitable for enhancing a caipirinha, daiquiri or mojito - with its subtle bitter notes accompanied by sweet citrus aromas, actually tastes like a cocktail in itself. Incidentally, contrary to popular misconception, limes are not green lemons, but a type of citrus in their own right, and also turn yellow when ripe. The adjective "Persian" is probably due to the distribution route from Asia via old Persian trade routes to Europe.
