This mezcal, made from 18 to 25-year-old wild Arroqueño agaves, comes from master mezcalero José Luis Sánchez "Shonga" of Santa Catarina Minas, Oaxaca, Mexico, about 1,500m above sea level, and is one of the very few that can call itself "ancestral". This classification is subject to strict rules regarding production, which basically has to be done as it was hundreds of years ago, without any use of modern technology or even modern materials: earth ovens, stone mortars, wooden barrels, clay pot distillation, etc.

Arroqueño is a species of Agave Americana that only grows wild, which is one of the oldest varieties. Not only is it considered the genetic mother of the espadin agave now common in industrial mezcal, but it also requires 18 to 25 years to mature. However, it offers a comparatively high yield of about 100kg at harvest.
The Sacapalabras Mezcal Ancestral Arroqueño appears in the aroma only slightly smoky, also only mildly herbaceous, but with a slight bitter note reminiscent of green olives, which is complemented by a citrus-like freshness. The taste immediately unfolds a dark sweetness reminiscent of caramel and accompanied by quite concise smoke. The finish seems a bit drier and spicier, but without being sharp.

For this purpose, wild agaves up to 25 years old are harvested, baked for days in a hole in the ground, crushed with wooden hammers, fermented with wild yeasts and then distilled in small clay pots.
