Mezcal Local Destilado con Corazón de Agave | Pechuga

Mezcal Local Destilado con Pechuga is made from 100% pure Espadin agaves (these are relatively robust, very large and starchy and are usually grown completely without chemical additives). For the Mezcal Local, the espadin agaves are only harvested after 10 years.

It is a Pechuga de Maguey style and is distilled with agave hearts and fruits (apple, peach, banana and orange). The "heart" of the agave is a natural cleaning agent for all substances that do not belong in the distillate and at the same time adds unmistakable notes. It is no coincidence that Mezcal Local has a community of almost 1 million followers on social media.

Mezcal Local was deliberately developed for both new discoverers and aficionados. It is perfect for new mezcal consumers who have barely tried mezcal before - but also for true connoisseurs looking for something a little more sophisticated.

How is Mezcal Local Destilado con Pechuga produced?

Leonel Hernández (Don Gil) is a 3rd generation maestro mezcalero and a true virtuoso of mezcal production. First, the agaves are cooked underground for 3 days and then ground using an Egyptian mill. The result is then fermented in wooden vats for 10 days.

Mezcal Local gets its strong fruitiness from the addition of fruit during the distillation process: apple, peach, banana and orange. Agave hearts are added to the still together with the fruit. While the agave hearts act as a natural "purifier", the added fruit brings a deep fruit flavor to the body. The Mezcal Local is distilled twice in copper stills to obtain a clear spirit.
