More information about Torta di Mele
Our ode to the great white wines of our time. Our Torta di Mele tells the story of an apple pie in glass and mouth, it finally shines in the hue of a fresh apple tart and reveals the wonderful aromas of dough, apples and nutmeg.
Cuvéetiert it is from 97% honey wine, gekeltert from Eggetaler Frühtracht and 3% apple wine, harvested and selected in the Ravensberger country. It was aged for 18 months on a fine yeast lees, of which 12 months were spent on a Margaux red wine barrique. In total, the batch holds a size of 228 bottles.
Initially dull and restrained on thenose, it opens up as it swirls in the glass, releasing scents of cloves, nutmeg and apples, coupled with a subtle sweetness and yeasty note.
Thepalate is then lean and aromatic, dominated by apple, a classic honey tone, nuts and a hint of yeast dough.
What remains are pleasant tannins reminiscent of fresh apple peel that linger in the mouth as the flavors fade, giving an impression to the aging ability of the mead.
Torta di Mele benefits immensely from a food accompaniment - it is best served as a dessert companion to ice cream or cake, with fruit yogurt or fruit salads so that it can show its full splendor. It is also advisable to let the mead breathe in advance in a glass, preferably large red wine goblets or cognac snifters. Store the product in a cool and dark place - pour at 6 - 8°C and let it warm up slightly in the glass.

Vipera Honeywine & Spirits
Mead that claims to preserve the flavor and texture of honey and to incorporate nuances of fruit and spices into the flavor profile in the gentlest possible way. Spirits that take advantage of these same characteristics of honey wine when they finally draw the flavors back from the wood of the barrels in which the liquid gold was stored. In 2017, this idea finally took deeper shape - backed by a tradition and expertise that goes back 70 years, a soft spot for sweet wine and after various batches for private use, we decided to turn our passion into a profession. Since then, the subject of mead has followed us at every turn, and our ambition was aroused. True to the motto: "Give things the time they need", lengthy experiments with woods, barrel sizes and honey qualities began. The individual components were to mesh with each other and tell a story in their interplay. Once the mead has...
