More information about Winery Eymann Cuvée No. 318 Extra Brut
The Eymann winery in the Palatinate has been producing exquisite sparkling wines using traditional bottle fermentation for many years, working with the Burgundy varieties Chardonnay and Pinot Noir. Plots specially planted for sparkling wine production offer impeccable grapes from biodynamic cultivation.
The nose reveals citrus notes and yellow fruits such as pear and ripe apricot. There are also clearly perceptible aromas of light nuts and some white pepper, with a fine brioche note in the background. On the palate, the fine perlage gives an animating impression of freshness and aromas of quince and nutty notes make this a complex sparkling wine to enjoy.
A sparkling wine that can be enjoyed with a variety of dishes, from risotto with green asparagus and parmesan to sushi of all kinds. Cuvée 318 goes particularly well with a French lemon tart garnished with meringue. Bon appétit!

Gegründet 1961, zählt unser Weingut seit den 1980er Jahren zu den Pionieren des ökologischen Weinbaus. Seit über 15 Jahren bewirtschaften wir unsere Weinberge nach biologisch-dynamischen Prinzipien und sind seit 2006 Mitglied bei DEMETER. Auf knapp 18 Hektar in Gönnheim, Bad Dürkheim und Wachenheim produzieren wir klassische Herkunftsweine aus Riesling und Spätburgunder sowie Schaumweine nach traditioneller Flaschengärung. Unsere Philosophie ist geprägt von handwerklichem Schaffen und nachhaltiger Bewirtschaftung. Wir setzen auf Handlese, Spontangärung und natürliche Stabilisierung durch langes Hefelager, um auf Additive und Schönungsmittel verzichten zu können.
