This aromatic, Greek organic thyme grows naturally in the wild in the herb gardens of Dr. Nikolaos Paterakis.
Harvested by hand, the flowers and leaves are collected in baskets and gently dried in the shade using the prevailing sea breeze. The plant is then sieved rather than rubbed. This process allows the important essential oils of the organic thyme to be preserved and the intense flavor to be retained.
The volcanic soils and dry microclimate of the island of Lemnos provide us with herbs of exceptional quality. The natural cultivation of indigenous varieties contributes to the preservation of the local biodiversity of the North Aegean island.
As well as being used as a spice in hot and cold dishes, this thyme is also suitable for making tea.
