More information about Ayinger Winterbock
The winter bock from the Ayinger private brewery is a seasonal specialty that is only available between November and January. The dark doppelbock is brewed using a special three-mash process and impresses with an aroma-intensive variety of seven different types of malt. Once the brewing process is complete, the Winterbock is stored for a full 16 weeks. During this time, the beer unfolds its full aroma and develops its round, complex character.
In contrast to many winter bock beer creations, this example from Ayinger is not overly sweet: instead of heavy sweetness, Winterbock delivers a range of strong roasted aromas reminiscent of freshly roasted coffee beans and espresso. With an alcohol content of 6.7%, Winterbock is one of the milder bock beers and is correspondingly drinkable.
The beer presents itself in a deep brown chestnut color in the glass and is adorned with a crown of hazelnut-brown foam. A strong, malty aroma reaches the nose and tempts you to take your first sip. This reveals a full body with a creamy mouthfeel. The malt clearly sets the tone and caresses the tongue with notes of freshly brewed mocha, roasted coffee beans, cocoa and chocolate. A hint of spicy yeast and a touch of oven-fresh bread crust skilfully round off the interplay of aromas.
