More than 35 years ago, João Mendes bought a farm in Perdões, Minas Gerais, to support his family. Difficult times came and the coffee plantation declined. João Mendes decided to plant sugar cane to produce cachaça. And so the Cachaça João Mendes was born. Today, the company is run by his children, but all his care and passion go into this excellent quality cachaça, which today bears his name and has already won several awards.
Cachaça João Mendes Carvalho is aged in oak barrels for 4 years. Distillation takes place in copper stills, using only the heart of the cachaça (around 80% of total production). It has a persistent woody taste with notes of apple, syrup and almonds and a balanced alcohol content.
The sugar cane is harvested without burning it, so the nature is protected. Then it is cut, transported and ground on the same day, granting the highest quality for the final product. The fermentation process takes place in an air-conditioned controlled room to prevent the proliferation of unwanted fungi and bacteria.
