The brewer of the Belgian brewery Lindemans also has a son of whom he is mighty proud So proud that he even dedicates one of his creations to him Lindemans Cuvée René is a kriek named after his son that is brewed with whole cherries To extract every last ounce of their beguiling flavor from the red fruits, the resourceful brewers use a very special technique The cherries are fermented for six months in a lambic beer that is at least six months old The beer-cherry mixture is stored in huge oak barrels and acquires a wonderful taste of sun-kissed cherries during the maturing process Once the first maturation is complete, the beer is bottled and undergoes a second, spontaneous fermentation This process gives the beer its effervescent carbonation, which later conjures up a stately head in the glass
