Noble Coyote Jabalí
The production of mezcal from the wild Jabalí agave is a great art that only a few maestros mezcaleros have mastered. One of them is José Pérez Santiago, who distils this exotic and special mezcal in Santiago Matatlán in Oaxaca. It takes around 12 years for the Jabalí agaves to ripen before they can be harvested from the fields. The agave hearts are cooked, crushed and fermented in a traditional artisanal process before being distilled three times . A truly exceptional agave spirit with fresh, spicy and herbal notes that every agave spirit lover should try at least once.
