The usually rather fruity and sweet Highlland agaves from the region around Los Altos, Mexico, need 8 to 12 years to reach the desired maturity. Many other tequila producers harvest their agaves after just 5-6 years. Not so with this high-quality tequila. The jimadores use a machete (coa) to cut the leaves as close as possible to the heart of the agave (piña) in the traditional way. The agave hearts are then transported to the distillery and slowly cooked in brick ovens for 54 hours. This traditional production method prevents caramelization and allows the fruit to become very soft and thus develop its full aroma. Fermentation with natural yeast in stainless steel tanks takes over 2 1/2 days. The distillation is 2-fold. The distillate then matures for 2 years in bourbon oak barrels, which give it a special and complex taste. The NUEVE B "No.9B" Tequila Añejo is finished.
