More information about Zapfenduster aged in wooden barrels
The basis for this barrel-aged beer specialty was created in a collaboration between the Franconian brewery Kundmüller and the Brazilian brewery Cervejaria Bamberg. The Weiherer special brew bears the name Zapfenduster and does it justice. The Imperial Stout is a midnight-black delicacy with a sinfully creamy mouthfeel, a rich roasted aroma and a flavor profile composed of chocolate, coffee and caramel. This Franconian-Brazilian delicacy has even won gold at the International Craft Beer Awards.
So far, so good. But the Kundmüller brewery would not be the Kundmüller brewery if they left it at that.
To crown their exquisite creation, the brewers placed their fine special brew in a French oak barrel for seven months and then bottled it in fine champagne bottles. The maturation in barrels not only deepens the original taste of the beer and gives the aroma complexity and depth, it also adds wonderfully woody notes, subtle hints of vanilla and notes of dark red, ripe fruit to the profile. The wood barrel-aged version of Zapfenduster is a mahogany-colored beauty with powerful roasted aromas, notes of toasted malt, caramel, wine-soaked oak, warm spices and candied red fruit.
Cask ageing is never a bad idea, but in this case it has more than paid off!
