More information about Yaha-Yahui Mezcal Ensamble
Batch No.1 is a handcrafted mezcal from Oaxaca with 45% vol., made from an ensemble of the agave varieties Arroqueño (almost half), Mexicano, Tobalá and Espadín. Roasted in an earth oven for three days, fermented open for ten days with wild yeast in sabino wood, then double distilled in copper alambiques.
Produced in March 2022 - limited to 608 bottles. The Arroqueño agave needs 15-20 years to mature.
