More information about Barrel Cut Absinthe
Barrel Cut Absinthe combines the best of two worlds: Real premium absinthe with the complex notes of a barrel-aged whiskey. To achieve this, we first distill an absinthe and age it for several months in an American bourbon barrel. Through this process, the absinthe gains flavor and color.
The absinthe recipe is deliberately kept simple. We focus on the three traditional herbs of a true absinthe: wormwood, green anise and fennel. Other complex flavors are added by the barrel.
How to drink Barrel Cut Absinthe
The taste of Barrel Cut absinthe is smooth and balanced. There are no dominant anise and fennel notes. The color of Barrel Cut is a noble gold with yellow reflections. By the way, the color remains stable even when ice cubes are added. That is, Barrel Cut does not cloud, as we have deliberately chosen a low anise content so as not to overpower the notes of the barrel. The palate detects woody barrel and spicy herbal notes, as well as smooth vanilla on the finish.
The alcohol content turns out to be a bit lower than a classic absinthe at 42%. For we recommend serving Barrel Cut Absinthe neat or on ice. That is, without water and without sugar, just like a whiskey. So Barrel Cut is not a traditional absinthe, but a new category: a ready-to-drink, barrel-aged absinthe to enjoy neat.
The Barrel Cut Absinthe Project
Barrel Cut Absinthe was created in collaboration with the German SaarWhisky distillery. The team is known for their fancy absinthes and single cask whiskies. Their many years of experience with barrel-aged spirits supported the development and implementation of the Barrel Cut project.
More absinthes are planned for the future. The idea is to offer different barrel agings under the name "Barrel Cut". The base of the absinthe will always be the same. The different flavor profiles should come from different barrels. Ceteris paribus, i.e. all other things remaining constant, the characteristics of the respective barrel and its previous contents will be brought out particularly well.
