Chawar Blanco Andean Agave Spirit

Chawar Blanco Andean Agave Spirit is a unique distillate from Ecuador. It is produced by the MISHKITA cooperative, a company run exclusively by indigenous women to preserve the original tradition of extracting agave juice. This is called Chawarmishki in the Quechua language, from which the name of the aromatic Ecuadorian is derived. Chawar is therefore not a classic agave spirit, but a distillate made from fermented agave juice, also known as pulque. The juice is obtained from Andean agaves of the Americana variety, which can take up to 15 years to reach harvest maturity, but is well suited to the extraction of agave juice due to its size. The aroma of Chawar Blanco has fresh, grassy notes with a mild sweetness and a creamy texture.

CHAWAR ist ein handwerklicher Agavenbrand aus den Hochlagen Ecuadors, hergestellt von MISHKITA, der ersten rein weiblichen Agavenerntegenossenschaft des Landes. Die Frauen pflegen die traditionelle Ernte des Agavensafts, „Chawarmishki“ – Quechua für „roh“ und „süß“. Der Saft der bis zu 15 Jahre alten Agave Americana wird durch Klopfen gewonnen, natürlich fermentiert und doppelt destilliert. Das Ergebnis ist ein blumiger, süßer Agavenbrand mit einer weichen, natürlichen Note, milder als Tequila oder Mezcal. Produziert wird in Yaruqui, nahe Quito, unter der Leitung von Brennmeisterin Elizabeth Guaguilla.
