- Distilled using the triple method with three different types of juniper: Italian, Mediterranean juniper and a local variety from the island of Saaremaa on the Baltic Sea.
A strong statement with 58% and exceptional ingredients. Sea buckthorn with licorice roots, Indian cashew nuts and cardamon awaken the senses. The pretty blue blossoms of cornflower add a smart spiciness with mild sweetness at the same time. A unique smooth gin with sweet and spicy accent of cardamon.
The base is a 96.7% organic rye spirit (gluten-free). Distillation is done using the triple method with three different species of juniper from Italy, Mediterranean and the local island of Saaremaa on the Baltic Sea. The juniper is macerated in 96.7 strength ethanol for 24 hours. Before distillation begins, more junipers are added to the pot (non-macerated juniper) and finally more juniper is added to the gin basket.
The rest of the botanicals are added to the copper pot or to the copper gin basket (carbonated or steamed, depending on the purpose). The special is the pure water from the nature reserve Viidumäe from Saarema spring.
