The stories of Old Tom gin are mysterious, excitingly dangerous and some just made up. Dutch genever became the favorite drink of London society with the ingenuity of English pub operators.
Unlike the British who added sugar to Old Tom, our Danish Master Distiller in Estonia uses apple, almond, licorice root and star anise for sweetness. Well balanced with sloe berries for the right acidity and hint of bitterness. The base is a high quality 96.7% organic rye spirit (gluten free). Distilled using the triple method with three different juniper species from Italy, Mediterranean and the local island of Saaremaa on the Baltic Sea.
The juniper is macerated in 96.7% strong ethanol for 24 hours. Before distillation begins, more junipers are added to the pot (non-macerated juniper) and finally more juniper is added to the gin basket. The rest of the botanicals are added to the copper pot or to the copper gin basket (carbonated or steamed, depending on the purpose).
The special is the pure water from the nature reserve Viidumäe from the Saarema spring, local botanicals, love for gin and a refreshing apple note.

My name is Steen Lerche-Jensen and I am the founder and Master Distiller at The Hope Distillery OÜ. My gin story begins in the summer of 1997, when I decided to leave my old life in Denmark behind and go in search of new adventures. So I packed my little suitcase and flew to London to make a new start. Just like the Vikings used to do - with the dream of learning about different cultures and living in them! The time in London was great. I learned about many different types of gin and developed a passionate interest in juniper distillate. My trip to London was just the beginning - from here I traveled to many more countries to work and pursue my hobby of drinking gin.
