Juerte Destilado de Pulque

Juerte Destilado de Pulque is produced in the state of Tlaxcala, west of Mexico City. This special spirit is obtained by fermenting the agave juice of the Maguey Pulquero (botanically known as Agave Salmiana), known as aguamiel, and then distilling it. As soon as the agave reaches maturity, a large hole is cut into the tip of the piña. The plant's natural reaction is to fill the hole with aguamiel. This process is repeated several times a day over a long period of time, allowing up to 10 liters of aguamiel per day to be extracted from one agave. The agave juice is then fermented for around a week. After fermentation, the fermented aguamiel, known as pulque, is distilled in a stainless steel still.
