There is a simple reason why we do not use the so-called albedo - the white layer of the citrus fruit lying immediately below the outer oil cells - as it is of no value to our spirits, since it does not contain any volatile flavoring substances but consists mainly of pectin, a component of gelling agents. The albedo of the mandarin degenerates into a web of fibers as it ripens, which is what the Latin species name "reticulata", meaning "web-like", refers to. Because of this reduction in albedo at maturity, mandarins are among the so-called "easy peelers" that are particularly easy to peel.
For us, however, this meant a lot of work, because we took the trouble to scrape off the albedo on the inside of each individual peel with a knife. It paid off in any case, because we succeeded in creating a unique, particularly pure tangerine spirit. The aroma of the tangerine spirit is determined by the cyclic monoterpenes limonene and terpinene as well as the N-methylanthranilic acid methyl ester, which occurs only in very small quantities but causes the characteristic odor.
A spirit that can be poured straight into the glass at any time and that immediately makes you dream of summery southern climes.
