More information about Sacapalabras Mezcal Ancestral Coyote
This mezcal made from 15 to 18-year-old wild coyote agave comes from the master mezcalero José Luis Sánchez "Shonga" from Santa Catarina Minas, Oaxaca, Mexico, around 1,500 meters above sea level, and is one of the very few that can call itself "ancestral".
This classification is subject to strict rules regarding production, which must basically be carried out as it was hundreds of years ago, without any use of modern technology or even modern materials: earth ovens, stone mortars, wooden barrels, clay pot distillation, etc.
You can't capture more primal flavor than that!
The Coyote is a wild-growing species of the Lyobaa agave, which only reaches maturity after 15 to 18 years of growth and even then only weighs a few kilograms, so that the yield of the current production (2021) was only 42 liters, of which we were able to fill 36 bottles for Germany.
Despite its high alcohol strength of 49.9% by volume, Sacapalabras Mezcal Ancestral Coyote appears very mild in the glass, only slightly smoky and somewhat herbal and vegetal. In the mouth, however, its full aromatic power unfolds immediately: more intense smoke, vegetal notes of the agave plant, a hint of earthy aromas, accompanied by a mild and surprising sweetness. The finish is long and warming, with an interplay of smoke, earthy aromas and a dry, spicy impression of agave.

Sacapalabras Mezcal is handcrafted in Santa Catarina Minas, Oaxaca according to centuries-old tradition. For this purpose, wild agaves up to 25 years old are harvested, baked for days in a hole in the ground, crushed with wooden hammers, fermented with wild yeasts and then distilled in small clay pots.
