More information about vanimo mixed Mani table olives
Our table olives were carefully harvested by hand in November 2025, washed immediately after harvesting and then soaked directly on site in clean seawater from the Ionian Sea, which we take from the Mani peninsula. We give them the time they need to ferment naturally - in the traditional way, using only water, salt and patience, without any additives. Our olives are of course not dyed and retain their natural color and original taste.
During this time, the water is regularly renewed in order to slowly and carefully reduce the natural bitter substances. Before bottling, the brine is briefly heated to around 85 °C - the olives themselves remain raw and retain their natural flavor.
The olives are deliberately not sorted so that both green and fully ripe, dark fruits are in the pack.
The result is a particularly authentic, varied taste - which emphasizes the true taste of the olives, because the gentle processing without vinegar creates a mild, round and natural taste that reflects the origin and quality of the fruit in an unadulterated way.
One pack contains olives of the Greek varieties Kalomon, Athinoelia, Megaritiki and Korineiki.
