More information about Symposium feat. Finca Parera
The concept of biodynamic agriculture follows the principle of a circular economy Farms that follow this path combine animal husbandry and food cultivation: humans, animals, plants and soil live together in a symbiosis and benefit from each other The animals provide valuable fertilizer that makes the soil productive, the plants feed animals and humans and the farmer(s):in ensures that everything runs smoothly It takes a while for the processes to settle in and the yields are significantly lower than in conventional farming because no artificial fertilizers are used and parts of the harvest are fed back into the cycle Many farmers are put off by this, but not the team at Finca Parera
Ruben, Kike and two Jordis grow wine, fruit, vegetables, cereals and olives in Sant Llorenç d'Hortons and keep livestock and bees on their estate They and their farm came to our attention as part of their collaboration with the Spanish brewery Espiga: the brewers brought the experts in good wine on board for their Grape IPA The product of their joint work is called Symposium and is made with must from the Xarel-lo grape
This unusual IPA combines lemony freshness, sweet banana notes and sun-kissed grapes and gives us the best of grape must and the hop varieties Aramis, Centennial, Citra, Columbus, Loral and Mistral
