The Cuvee Monsignori embodies the Argyros Winery’s vision of what Santorini’s Assyrtiko can truly be. Unusually old Assyrtiko vineyards, at least two hundred years old, that yield very small harvests. Fermented—partly through spontaneous fermentation—in stainless steel at cool temperatures and aged for ten months on the fine lees in stainless steel tanks.

The result is a delicate, complex interplay of citrus, apple, and mineral and salty notes. A wine of character, body, and length that needs about four years in the bottle to fully develop and can confidently be cellared for more than a decade after harvest.

Fermentation took place in stainless steel tanks at a controlled temperature of 16–17°C for nearly three weeks. Subsequent aging took place for 11 months in stainless steel tanks on the fine lees with occasional bâtonnage—three times a week during the first two months and then with decreasing frequency.

A very good pairing with shellfish and lean fish.

Estate Argyros

Das Weingut Argyros wurde 1903 gegründet, jedoch war die Familie Argyrs davor bereits seit Jahrzehnten in die Weinproduktion involviert. Es ist der größte private Eigentümer von Weinbergen auf Santorin und der aktuelle Landbesitz überschreitet 120 ha Größe -  eine große Errungenschaft über vier Generationen. Obwohl mehrere Generationen gute Weine aus den hochwertigen Lagen machten, war es Yiannis Argyros der das Weingut in die Elite der Weinproduzenten beförderte. Er übernahm das Weingut 1974 und arbeitete unermüdlich für mehr als drei Jahrzehnte daran seine Vinsantos zu den feinsten und rarsten Süßweinen der Welt zu machen.
