Our first BALSAM is born, but allerding more fruity than sweet, but much sweeter than our vinegars and only with 4% acidity, which is why it is also a balsam and not a vinegar. But what is a BALSAM and what is a balsamic? Unfortunately, there is no fixed set of rules, so we can only contribute our professional opinion. A balsamico is a vinegar aged (fermented) for at least 12 months in a wooden barrel. The alternative to this in Germany is the Balsam, which can also be fermented in the barrel, but does not have to be.
Our BALSAM is a refined organic BASIC red wine vinegar from our manufactory, but refined with reduced grape juice and added with brown raw sugar. This gives a very fine fruity and mild note. But it is not now thick and creamy, because then we would have had to actually work with a lot of sugar and thickener and we did not want that in any case.
Our tip: of course, the classic for tomato salads, tomato mozzarella. But also excellently suited for gravy, especially for red meat such as roast venison, sauerbraten, etc..
