Beer style: Red Wine Barrel Aged Bock
Beer is a drink that takes time The brewing process takes a few hours, after which the creation must be fermented and stored Most beers need around three to four weeks to mature to their full glory However, in the spirit of the slow food movement, there are also brews that require significantly more patience from their makers These exquisite beverages include Remmidemmi from ÜberQuell Brauwerkstätten
The elegant bock beer was brewed over a normal period of four weeks and then aged for an incredible 18 months in a red wine barrique barrel The wooden cask comes from the Knipser winery in Johannishof in the Palatinate and gives the beer the dark aroma of a fine red wine
However, not just any bock was used for this process: The brewers brewed a full-bodied strong beer especially for barrel ageing, which was refined with cocoa chips and freshly harvested blackberries Over the course of ageing, the aroma deepened and formed a flavor profile consisting of chocolate, red forest fruits, blackberries and cocoa The beer owes its earthy woody notes, vanilla hints and fruity acidity to the barrel The powerful brew brings a full 10.5% alcohol content into the glass and warms body and soul with its complex character
